My Favorite Recipe

Salmon RecipeHere I provide a video of me making my favorite meal. It is extremely easy to make, delicious and healthy. It is called Salmon Favetta with a Radish, Celery and Lemon Citronette.

For the salmon, make sure that it is fresh (not frozen or precooked). Get two normal sized fillets for this specific recipe. Then follow the directions below to make the Favetta and Citronette.

Note: The Citronette will taste a little bitter by itself, but totally dreamy over the salmon and Favetta. Trust me on that and don’t mess with the recipe!

Radish Celery and Lemon Citronette

Add the following to a blender:

  • 1 Celery Stalk
  • 1 Medium sized Radish
  • 1/4 cup Olive Oil
  • 6 Tbs Lemon Juice
  • 2 Tbs Brown or Dejon Mustard

Blend till will blended and then refrigerate.

Favetta with Thyme

In the same blender, mix:

  • 1 19oz can of Fava Beans
  • 2 Tbs Fresh Thyme
  • 1/4 cup of Skim Milk

Then blend until it has the consistency of refried beans. Transfer then to a hot pan and warm while you cook the salmon.

The Salmon

Heat a pan on high and add 1/2 Tbs of Olive Oil.

  • Cook the salmon on high for 2 1/2 minutes (skin side down if it has skin attached).
  • Flip the Salmon and remove the skin
  • Cook for an additional 2 minutes for rare

I think salmon should only be consumed rare, but cook it further to your liking.

Plating the Salmon

Now take the Favetta and cover the plate with it. Add the salmon to the top and top with as much citronette as you like. I hope you enjoy this recipe as much as me and my wife.
