Green Curry Eggplant RecipeIn this video I present my Green Curry Eggplant Recipe. This is a very spicy recipe if you get a nice and spicy jalapeño. I loved this recipe so much that I had to find alternative ingredients that were available to me year round.

I’m sure this video will get some laughs because I have so many people from around the world watching these videos. I’d love to hear more about how I could make this dish and others in similar ways. I love to eat different food from around the world. The recipe follows the video below.

Green Curry Eggplant Recipe

Jasmine Rice

  • Mix 2 1/2 Cups of Rice with 4 Cups of water in a thick bottom pan
  • Bring to a boil on high + Stir
  • Cover + Reduce heat to 40% and cook between 6 – 8 minutes or until done

Green Curry Eggplant Topping

  • Fry 2 Cubed Eggplants on high for 3 – 4 minutes until browned ( Remove )
  • Fry Diced 1 Red Pepper and 1 jalapeño on high for 2 minutes ( Remove )
  • Add 1 TBs Oil + 3 TBs Green Curry Paste and stir for about 30 seconds

Add the rest of the ingredients to the pan :

  • 1 Can of Coconut Milk ( Light is ok )
  • 3/4 Cup Bamboo Shoots
  • 1 TBs Soy Sauce, Liquid Aminos, Tamari, or Fish Sauce
  • 1 TBs Brown Sugar
  • 1 TBs Lime Juice
  • 1 TBs Pesto, Sweet Basil, or Thai Basil

Mix vegetables into the sauce above and you are done!

    i know you have a lot of tutorial requests (because your tutorials are the best), but please, if you have times, make c++ video tutorial even if it’s just one, may be “Learn C++ in 30 minutes”. 🙂

          Thank you very much 🙂 I try to do my best. I recorded this video on my phone which was hanging off my microwave door. I normally record screen captures with Camtasia 2. I then edit everything with iMovie, which is my favorite thing about owning a Mac.
