Chipotle Copycat RecipesLast week I ate at Chipotle for the first time, so I decided to make a bunch of Chipotle copycat recipes that taste like the original, but I’m guessing are a lot healthier.

We’ll make Sofritas, Black Beans, Cilantro Lime Rice, Pico De Gallo, No Fat Tortillas and Guacamole. I hope you enjoy these recipes as much as I did. They contain little to no fat, are lower in sodium and extremely cheap. All the recipes can be found below.

Recipes From the Video

Chipotle Sofritas

1. Place extra firm tofu on a plate covering with heavy objects for about an hour or more

2. Roast 1 Quartered Seeded Poblano Pepper in oven at 500 degrees until skin blisters. When cool peel

3. Cut tofu into 8 slices and fry for 2 minutes per side and then dice

4. Blend the following

a. 3 ounce can of Chipotle Peppers in Adobo Sauce
b. Poblano Pepper
c. 1/2 Yellow Onion
d. 2 Tbs Minced Garlic
e. 2 Tbs Tomato Paste
f. 1 Tbs Ground Cumin
g. 2 tsp Oregano
h. 3 tsp Lemon Juice
i. 1 Tbs Soy Sauce / Liquid Aminos
j. 1/4 Cup Water

5. Add everything to a pan. Bring it to a boil and then simmer for 5 minutes.

6. Add Salt to taste

Chipotle Black Beans

Add the following to a pan and cook on medium til your preferred temperature

a. 1 Can Black Beans Drained
b. 1 Can Black Beans Undrained
c. 1 tsp Chili Powder
d. 1 Tbs Minced Garlic
e. 1/2 tsp Sugar
f. 1/2 tsp Cumin
g. 1/2 tsp Salt to taste

Chipotle Cilantro Lime White or Brown Rice

1. Cook 2 Cups White / Brown Rice in Rice Cooker or cook for 12 min on medium

2. Mix rice with the following

a. 2 Tbs Lime Juice
b. 1/2 Cup Diced Cilantro
c. Salt to taste

Pico De Gallo Salsa Recipe

Mix the following

a. 1.5 Cups Diced Seeded Thick Tomatoes (Roma)
b. 1/4 Cup Diced Vidalia Onion
c. 2 Tbs Jalapeno
d. 1/4 Cup Cilantro
e. 2 Tbs Lime Juice
f. Salt to taste

Tortillas

2 cups of white flour
1 1/2 tsp. baking powder
1 tsp. salt
3/4 cup warm water
Blend above in a food processor until a ball is formed

Place in a bowl and cover with a warm damp cloth for 2 hours

Put pan on 60% and cook on each side for 1 1/2 to 2 minutes

Chipotle Tomatillo Green Chili Salsa

1. Add the following and blend

a. 6 Tomatillos
b. 2 Tomatoes
c. 1 Tbs Minced Garlic
d. 2 Seeded Jalapeno Peppers
e. 1/2 Cup Diced Vidalia Onion
f. 1/4 Cup Cilantro
g. 1 Tbs Ground Cumin
h. 4 Tbs Lime Juice
i. Salt & Red Pepper Flakes to taste
