I’m still on the search for the perfect meal! I’m calling the perfect meal a meal that contains all the daily required vitamins, minerals, proteins, fats and fiber at the lowest calorie count. Last time I made a Sun Dried Tomato Lentil and Greens Salad, but you guys told me to make a new recipe without sun dried tomatoes, that tasted even better. I’m very happy with my results! This time I made a Lentil, Yam and Collard Green Curry Stew that is amazing. It is extremely filling and just wonderful. The recipe follows the video below.

Ingredients for Stew 1 TBs olive oil 1 Cup onion, diced 3 cloves Garlic, minced 1 Cup chopped Portobello Mushrooms 2 TBs Curry Powder 1 tsp Salt 1 tsp Fresh Minced Ginger 2 TBs Tomato Paste 1 cup uncooked Lentils 4 cups Vegetable Broth 2 cups chopped Carrots 4 Cups cubed Yams 2 cups boiled diced Collard Greens 1 cup frozen diced Spinach INSTRUCTIONS Vegetable Broth Add the following with a pinch of salt and stir for 3 minutes 3 Onions 2 TBs Garlic 1 Cup Diced Carrots 1 Cup Diced Celery Add with another pinch of salt 2 Cups Mushrooms Finish by adding 1 Can Diced Tomatoes 1 TBs Oregano 1 TBs Basil 8 Cups Water Bring to a boil and then simmer at 20% for 1 hour Lentil, Yam and Collard Green Stew Add the following and cook for 2 minutes 1 tsp Olive Oil 1 Cup Onion, diced 3 cloves Garlic, minced 1 tsp Salt 1 Cup chopped Portobello Mushrooms Add the following and stir for 2 minutes 2 TBs Curry Powder 1 tsp Fresh Minced Ginger 2 TBs Tomato Paste Add the following and simmer for 15 minutes 1 cup uncooked Lentils 4 cups Vegetable Broth Add the following and simmer for 20 minutes 2 cups chopped Carrots 4 Cups cubed Yams Add the following and cook for 10 minutes 2 cups boiled diced Collard Greens 1 cup frozen diced Spinach
