There is a vegan version of pretty much anything. Today I’ll make protein packed recipes featuring Seitan (80 – 85% Protein) and TVP (60 – 65% Protein). We’ll be making Barbecue Seitan, Vegan BBQ Sauce, Vegan Sloppy Joes and Sweet Potato Fries. ----------------- Barbecue Seitan ----------------- Mix the following dry ingredients 1. 1 Cup Vital Wheat Gluten 2. 2 TBs Nutritional Yeast 3. 1 TBs Paprika 4. 2 tsp Onion Powder 4. 1 tsp Oregano 5. 1 tsp Garlic Powder Add the following and mix until a thick ball forms 1. 3/4 Cup Vegetable Broth 2. 1 TBs Liquid Aminos / Soy Sauce Cut the seitan pieces knowing they will double during boiling Bring the following to a boil 1. 5 Cups of Vegetable Broth 2. 2 TBs Liquid Aminos / Soy Sauce 3. 3 TBs Nutritional Yeast Add the seitan, wait for the boil and then simmer at 25% for 30 min Blend and cook at 20% for 20 minutes 1. 1 15 oz Can Tomato Sauce 2. 1/4 Cup Apple Cider Vinegar 3. 1/4 Cup White Vinegar 4. 1/3 Cup Agave Nectar 5. 1/4 Cup Molasses 6. 1/4 Cup Tomato Paste 7. 2 TBs Liquid Smoke 8. 1 tsp Garlic Powder 9. 1 tsp Paprika 10. 1/2 tsp Onion Powder Cover the seitan with the barbecue sauce and cook for 30 min at 375 degrees ----------------- Vegan Sloppy Joes ----------------- Cook the following for 5 min in pan with a little water 1. 2 Minced Onions 2. 1/4 Cup Peppers Add 1. 3 Cups Water 2. 2.5 Cups of TVP (Textured Vegetable Protein) 3. 1.5 Cup BBQ Sauce 4. 1/4 Cup Tomato Paste Bring to a boil and then lower to 20% and simmer 20 minutes ----------------- Sweet Potato Fries ----------------- 1. Cut sweet potatoes into wedges 2. Lightly spray with cooking spray 3. Sprinkle with paprika, salt and pepper 4. Cook for 30 minutes in the oven at 450 degrees 5. Flip half way through and season to taste |
